El Manantial, which means "the spring or oasis," is a new Mexican food cart joining Mark's Carts for the 2013 season. At our cart, we will stay true to my family recipes and authentic preparation methods. I am proud to offer you the food of my family. Local farmers and gardeners will provide the fresh products that I need for my recipes, which include some traditionally prepared offerings as well as seasonal fare to highlight the local harvest.

"Hut-K" means "non-mainstream," and "chaats" are savory, flavorful Indian street food. It's the brainchild of Dr. Swaroop Bhojani, a cancer researcher, and Sumi Bhojani, a teacher. They believe that nutritious food can also taste great. Their healthy sauces are based around raw foods like spinach, cilantro, mint, dates, mangoes and lime. They've replaced sugar with dried fruits, and traditionally fried foods are often baked. It's a culinary experience of flavors, nutrition, and healing by food.
